This special dish is Davide’s twist on a classic roast - a beautifully tender deboned turkey breast, stuffed with prosciutto, spinach & parmesan then wrapped in savoury prosciutto, creating the perfect balance of flavour and texture. Inspired by a whole deboned chicken Davide used to prepare during his early years working in an Australian restaurant, this recipe brings together tradition, nostalgia, and festive flair.
Moist, flavourful, and elegantly presented, this roast makes a stunning centrepiece for your Christmas table. The salty crispness of the prosciutto locks in the juiciness of the turkey, making it easy to carve without the stress of roasting a whole turkey.

Preparation Instructions
(This product is raw and requires cooking)
Step 1 - Defrost: Place the sealed product in the fridge 48 hours before cooking to defrost completely.
Step 2 - Remove from the fridge an hour before cooking.
Step 3 - Preheat an oven to 160°C (fan forced) and place the turkey into a roasting dish with the netting. Roast for 60 minutes till the prosciutto is nice and crispy. You can alternatively remove the netting for the last 20 minutes to crisp up the prosciutto.
Step 4 - To check the turkey is done, insert a meat thermometer into the centre. We recommend removing the turkey at 70°C and allowing the turkey to rest for 20 minutes before carving, the internal temp will continue to rise while resting.
Step 5 - While the turkey is resting, open the gravy pouch and reheat the contents in a pot on the stove, stirring to combine.
